Southern Bluefin Tuna Salad with Lemon Mustard Vinaigrette

For the patties:

  • 4 tin Lukina’s Special Bluefin Tuna, drained
  • 1 punnet cherry tomatoes, halved
  • 2 avocado, sliced
  • 1/2 red onion, finely sliced
  • Mixed lettuce leaves
  • Lemon slices, to serve
  • Pepper, to taste

For the lemon mustard vinaigrette:

  • 1/2 tablespoons seeded mustard
  • Juice from 1 lemon
  • 1/2 teaspoon apple cider vinegar
  • 1 teaspoons honey or pure maple syrup
  • 1 clove garlic, finely minced
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/3 cup extra virgin olive oil
  • 1/4 teaspoon freshly ground black pepper

Method

1 In a small bowl, combine the seeded mustard, lemon juice, apple cider vinegar, honey, garlic, oregano and basil. Season with pepper. Slowly whisk in the olive oil until the dressing is smooth and emulsified.

2 In a large salad bowl, combine the mixed lettuce leaves, cherry tomatoes, avocado, and red onion.

3 Gently break Lukina’s Special Bluefin Tuna into chunks over the salad.

4 Drizzle generously with the lemon mustard vinaigrette and garnish with fresh lemon slices. Serve immediately.
