Sesame-Crusted Bluefin Tuna with Fresh Vegetables

Premium seafood deserves a simple approach. This sesame-crusted bluefin tuna is lightly seared to preserve its naturally rich flavour and decadent, buttery texture. Coated in sesame seeds and paired with fresh vegetables, it’s a nourishing, protein-rich dish that showcases the quality of ocean-fresh Australian produce.

  • 2 x 150-250g Dinko Southern Bluefin Tuna steaks
  • 2 tablespoons white sesame seeds
  • 2 tablespoon black sesame seeds
  • 1 tablespoon extra virgin olive oil
  • Sea salt flakes, to taste
  • Freshly cracked black pepper
  • 1 teaspoon lemon zest

Dressing:

  • 1 tablespoon fresh lemon juice
  • 1 teaspoon soy sauce (optional)
  • 1 teaspoon honey
  • 1 teaspoon freshly grated ginger

For the charred vegetables:

  • 1 zucchini, sliced lengthways
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Sea salt and cracked pepper

Method

1 Combine the white and black sesame seeds on a flat plate. Pat the Dinko Southern Bluefin Tuna steaks dry, brush lightly with olive oil, and season with sea salt, cracked pepper, and lemon zest. Press each steak firmly into the sesame mixture, coating all sides evenly.

2 Heat a barbecue or grill pan over medium-high heat. A hot surface is essential to create a perfect golden crust while keeping the centre tender.

3 Whisk together lemon juice, soy sauce (if using), honey and ginger. Drizzle lightly over the tuna just before serving.

4 This recipe is wonderfully flexible, so feel free to swap in whatever vegetables you like. For this version, we have used fresh julienned zucchini and sweet cherry tomatoes for color, texture, and freshness. Toss the vegetables with olive oil, salt and pepper. Set aside.

5 Place the sesame-crusted tuna onto the hot grill. Cook for approximately 1½–2 minutes per side for rare to medium-rare. The sesame seeds should form a crisp crust while the centre remains beautifully pink. Avoid overcooking to preserve the tuna’s natural richness and delicate texture.

6 Slice the tuna thickly and serve atop the fresh vegetables. Drizzle with dressing and season as desired.
