Perfect for the warmer months, this fresh and flavourful seafood salad recipe is sure to impress. Light, tasty and easy to prepare, you’ll want to take it to every summer BBQ.
Ingredients
1 Preheat BBQ to medium high heat.
2 Season asparagus with salt and lightly dress with oil, grill over medium to high heat on BBQ until slightly charred and cooked through. Set aside to cool slightly in bowl.
3 Whilst Asparagus is cooking, mix prawns and scallops in bowl with remaining olive oil, generous pinch of sea salt flakes and place on BBQ grill until just cooked through (2-3 minutes).
4 Add cooked seafood to Asparagus and mix in the herbs, shaved fennel, lemon juice and Salt and Pepper.
5 Dress lightly with Lukina Prawn Oil and place nicely in a bowl. Garnish with fresh herbs and wild garlic flowers.
