Make the most of the warmer weather with this fresh and fruity prawn and mango salad. Light, tasty and easy to prepare, you’ll make it a spring staple!
400g Dinko Prawns
2 mangos, diced
2 avocados, diced
1 red onion, thinly sliced
1 lettuce, leaves separated
2 limes, plus lime wedges to serve
1/3 cup finely chopped coriander leaves
1 long red chilli, finely chopped
1 tbsp honey
2 tbsp extra virgin olive oil
1 In a large frying pan, over medium-high heat, warm 1tbsp olive oil. Add prawns and cook for 45 seconds before turning. Cook for 1 minute longer then remove from heat. Set aside to cool.
2 Grate the zest of half a lime, then juice both limes. Place the lime zest and lime juice into a small bowl with the coriander, chilli, honey and oil. Whisk to combine and season well.
3 Place lettuce leaves, avocado, onion, mango and prawns in a bowl. Pour over prawn mixture and toss to combine.
