Prawn Noodle Salad

This delightfully tasty Prawn Noodle Salad is a versatile dish, brimming with flavour. Perfect for lunch, dinner or as a side salad.

Ingredients

  • 200g thin rice noodles
  • 200g large Dinko Spencer Gulf King prawns
  • ½ red capsicum, sliced
  • ½ yellow capsicum, sliced
  • 1 small red chilli, sliced
  • 1 large handful basil leaves
  • 2 tbsp sesame seeds
  • lime wedges, to serve

For the dressing

  • juice 3 limes
  • 1 tbsp soft brown sugar
  • 2 tsp fish sauce
  • 1 garlic clove, crushed

Method

1 To make the dressing, mix the lime juice, sugar, fish sauce and garlic and set aside.

2 In a large frying pan, over medium-high heat, warm ½ tbsp olive oil. Add prawns and cook for 45 seconds before turning. Cook for 1 minute longer then remove from heat. Set aside to cool.

3 Prepare the rice noodles as per packet instructions.

4 Drain noodles well, shaking the sieve numerous times to get out the excess water, then place them into a large bowl.

5 Add prawns, capsicum, chilli, basil and sesame seeds. Pour the dressing over and gently mix.

6 Garnish with lime wedges and serve.
