Risotto

This delicious prawn risotto recipe brings the experience of fine dining to your home. Creamy and hearty, the flavour combinations are heavenly and will have all your diners asking for more.

Ingredients

  •  1.2 litres of warm fish or veg stock
  • 400g of carnoroli rice (aborio also works)
  • 1 clove of garlic
  • 1 onion diced
  • 100 g parmeson finely grated
  • ½ bunch finely chopped chives
  • 150 g smoked white fish flaked into chunks (kingfish is good)
  • 150 g prawns
  • 200 g white vermouth/white wine dry
  • Unsalted Butter
  • Lukina’s Prawn Oil

Additional Serving Suggestions:

  • Dress scrambled eggs with prawn oil for a treat
  • Prawn Mayonnaise
  • Prawn oil on scrambled eggs and avocado.

Method

1 Garnish fennel fronds/Dill fronds

2 Dress the Risotto with a good glug of Lukina Prawn Oil.
