King Prawn Red Curry Recipe

With the weather cooling down it is time to heat up your recipes! This King Prawn Red Curry recipe is perfect for busy weeknights when you don’t want to slave away in the kitchen. Ready in just 30 minutes, and packed with all the good stuff, it really does tick all the boxes for a nutritious, easy and (most importantly) delicious meal.

Ingredients

For the Tuna Poke:

  • 2 tbsp vegetable oil
  • ½ jar Thai Red Curry Paste (we recommend Mae Ploy)
  • 400ml coconut milk
  • 500g Dinko Spencer Gulf King Prawns, peeled and deveined
  • 1 cup of mixed vegetables (we recommend green beans, mushrooms, and zucchini)
  • 1-2 tsp fish sauce
  • Fresh red chilli and basil leaves, to serve
  • Steamed rice, to serve

Method

1 Prepare the rice as per the package instructions.

2 While the rice cooks, heat the oil in a large saucepan over medium heat

3 Add the curry paste to the pan and stir for 1-2 minutes or so until it becomes fragrant. Stir through the coconut milk.

4 Add the prawns, vegetables, and 1/2 cup of water.

5 Bring to a gentle simmer and cook for 8-10 minutes, adding fish sauce at the end.

6 Top with red chilli and basil, then serve with steamed rice.
