Sure to become a family favourite, this prawn pasta recipe is bursting with flavour and ready in no time. Perfect for an easy weeknight dinner or a fancy dinner party!
Ingredients
1 Boil a large pot of water, add sea salt and cook pasta according to packet instructions.
2 In a pan heat up 3-4 generous lugs of Olive Oil and throw in the garlic and chilli. Once the garlic starts to colour, add in the prawns, white wine and chopped cherry tomatoes. Simmer for a few minutes until the prawns are cooked, the tomatoes are starting to break down and most of the wine has evaporated.
3 Once the pasta has cooked, drain and reserve some of the cooking water.
4 Toss the pasta through the sauce and add the handful of spinach and juice of the zested lemon (loosen the sauce if needed with the reserved pasta water).
5 Correct the seasoning with some salt and pepper and place onto plates.
6 Dress liberally with additional Lukina’s Prawn oil, lemon zest and chopped chives.
