Our fishing process

Did you know that the global tuna farming industry widely recognises Dinko Seafoods as a pioneer in tuna farming practices? That’s right!

It was our founder, Dinko Lukin, who established the groundbreaking ocean farming technique in his quest to develop the most sustainable Southern Bluefin Tuna fishery in the world.

Using Dinko’s technique, we harvest the wild Southern Bluefin Tuna as they pass through the cold, clean waters of South Australia during late summer in February/March.

Using a purse seine method, we corral the live fish and transfer only a select number to a net, and we set the remaining fish free to continue their migration.

We slowly tow the captured fish back to Port Lincoln, feeding them a diet of MSC-certified sustainable sardines and a natural nutritional feed supplement to ensure they have the flavour and texture of wild fish… while also increasing their fat content.

When Dinko first introduced this ingenious method, it doubled the fishermen’s quota as the limit on their catch was determined by the weight of the fish caught in the wild, with any weight gained in captivity a bonus. What’s more, it reduced the number of tuna caught!

And when it comes time to harvest, we use a Japanese method known as ‘iki jime’ (brain spiked) to euthanise the tuna stock humanely. We complete this process within 10 seconds of the tuna leaving the water, helping to minimise stress and maximise quality.

Dinko Lukin’s solution is now the internationally accepted method for Southern Bluefin Tuna farming.

Our super-freezing technology

Fish is always best fresh. That is why our innovative super freezing technology, which captures the Southern Bluefin Tuna’s ocean flavour and freshness, is so remarkable.

Our Southern Bluefin Tuna is frozen fresh within hours of harvest. We freeze the bluefin tuna to minus 60 degrees Celsius at our purpose-built processing facility, locking in the ocean-fresh flavour and texture and removing the need to use any harmful gases or preservatives.

All Dinko Seafood products are stored in our vacuum-sealed cryovac bags, then packed and transported in styrofoam eskies at -60 degrees celsius.

While we sell Dinko Seafood products at wholesale prices, small orders can become expensive when these specialised transport costs are added. To enjoy better value for money, we recommend placing orders of 5kg or more.
