Spencer Gulf King Prawn Mango Curry

Sweet, fragrant and gently spiced, this Spencer Gulf King Prawn Mango Curry is a fresh take on a classic seafood curry. Premium Australian Spencer Gulf King Prawns are simmered in a creamy coconut and mango sauce with warming spices, creating an easy weeknight meal that’s packed with flavour and perfect served with steamed rice and a squeeze of fresh lime.

  • 500g Spencer Gulf King Prawns, deveined
  • 1 tbsp vegetable oil
  • 1 fresh mango, diced 
  • 1 brown onion, sliced 
  • 1 tbsp fresh ginger, grated 
  • 2 cloves garlic, crushed 
  • 3 fresh chillis, roughly chopped 
  • 1 tsp chilli flakes
  • 1 tsp cayenne pepper
  • 1 tsp coriander 
  • 1 cup Coconut cream 
  • ½ cup vegetable stock 
  • Lime wedges, to serve
  • Salt and pepper to taste

Method

1 Combine cayenne pepper, coriander, and turmeric in a bowl. Add a touch of water and mix into a paste. Set aside.

2 Heat oil in a pan. Once hot, add diced onion, crushed ginger, garlic and green chilies. Cook until the onion is soft and translucent. 

3 Add spice paste to pan and mix for around 1 minute, until well combined.

4 Add mango and a pinch of salt to the pan. Toss for around one minute.

5 Pour coconut cream and vegetable stock into the pan, then stir in the prawns. 

6 Cover it with a lid and let it cook on medium low heat for 3-4 minutes.

7 Serve immediately, with lemon wedges to garnish.
