Fresh, hearty, and delicious, this Seared Bluefin Tuna with Fresh Basil Pesto is the perfect hero of any meal. Serve with steamed veggies, greek salad, or a scrumptious potato bake and enjoy some decadence on a chilly winter night.
Ingredients
1 Preheat the oven to 180°C. Spread the pine nuts on a baking tray. Bake in the oven for 5 minutes or until toasted. Remove from the oven and set aside for 10 minutes to cool.
2 Place the pine nuts, fresh basil leaves, garlic cloves (halved) and shredded parmesan in a food processor and process until roughly chopped. With the motor running, gradually add the 5 tbsp olive oil in a thin steady stream until well combined. Set aside.
3 Heat a large cast-iron skillet over medium-high heat, then lightly coat the skillet with cooking spray.
4 Coat the Dinko Southern Bluefin Tuna steak with salt and pepper, then place tuna in the skillet. Sear tuna for two minutes on each side.
5 Place tuna steak on a plate and top with basil pesto. Top with chilli flakes (optional).
6 Serve immediately.
