Tuna with Olive Relish

Southern Bluefin Tuna with Olive, Cucumber and Coriander Relish

Simple to prepare, healthy to eat and decadent to taste, this Southern Bluefin Tuna Steak is fresh and fragrant.

  • 6 Dinko Southern Bluefin tuna steaks
  • 4 tablespoons unsalted butter
  • 3 tablespoons of your choice of cooking oil
  • Coarse salt and freshly ground pepper
  • 3 cucumbers, finely diced
  • 1/2 cup pitted mixed olives, diced
  • 1/4 cup packed fresh coriander, finely chopped
  • 2 tablespoons fresh lemon juice, plus lemon wedges for serving
  • 1/4 cup extra-virgin olive oil


1 In a bowl, combine cucumbers, olives and coriander. Add lemon juice and 1/4 cup oil; season with salt and pepper. Set aside.

2 Season Southern Bluefin Tuna steaks with salt and pepper. Heat a large, heavy cast iron frying pan over high heat. Add 2 tablespoons of cooking oil.

3 When the oil begins to shimmer, add three of the tuna steaks and sear for one minute; turn and cook for 30 seconds more.

4 Add 2 tablespoons butter, swirl to melt and cook 10 seconds more.

5 Transfer fish to a serving platter, covering loosely with foil to keep warm.

6 Wipe out the frying pan and repeat with the remaining steaks.

7 Serve tuna topped with relish, with lemon wedges and more relish alongside.
