Southern Bluefin Tuna

Golden and crispy on the outside, tender and juicy on the inside, these Southern Bluefin Tuna patties are a simple way to jazz up a weekday meal. Combining decadent bluefin tuna with the zing of lemon, the bite of parmesan, and the crunch of breadcrumbs, these patties strike the perfect balance between comfort food and elevated delight. Paired with a creamy, spicy mayo that adds just the right kick, this dish is ideal for a quick weeknight dinner, a laid-back lunch, or even as a crowd-pleasing appetiser.

For the patties:

  • 3 can Lukina’s Special Bluefin Tuna, drained
  • 2 eggs
  • 2 tsp lemon juice
  • 3//4 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup shallots, diced
  • Pepper, to taste
  • Neutral cooking oil (such as vegetable oil or canola oil)

For the spicy mayo sauce:

  • 1/4 cup mayonnaise
  • 1 tsp lemon juice
  • 1/2 tsp dijon mustard
  • 1/2 tsp sriracha
  • Black pepper, to taste

Method

1 Add the mayo, lemon juice, mustard, sriracha, and pepper to a bowl and whisk until well combined. Place in the fridge until you are ready to serve.

2 In a large bowl, beat the eggs and lemon juice until combined. Add in the breadcrumbs and parmesan cheese and stir to combine.

3 Add the tuna and onion and gently fold in, until well combined; season with pepper.

4 Using your hands, gently shape the tuna mixture into small balls (roughly 3cm thick). Place on a baking sheet to prevent sticking.

5 Heat oil in a frying pan over medium heat. Once hot, place patties in the hot oil and fry for around 3 minutes per side (until golden brown).

6 Serve immediately, with spicy mayo on the side.
