Seared Bluefin Tuna Marinade

This simple yet flavorful marinade perfectly balances savoury, sweet, and citrusy notes to complement the natural richness of Southern Bluefin Tuna. It is ideal for grilling, searing, or elevating sashimi and sushi.

Ingredients

  • 4 x Dinko Southern Bluefin Tuna Steaks
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame seeds
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1-2 teaspoons chilli flakes
  • Fresh cracked black pepper, to taste

Method

1 In a bowl, whisk together the soy sauce, sesame oil, honey, rice vinegar, lemon juice, and Dijon mustard.

2 Stir in the grated ginger, minced garlic, sesame seeds, chilli flakes, and black pepper.

3 Cut your Bluefin Tuna into steaks or cubes, depending on your intended preparation.

4 Place the tuna in a shallow dish or a resealable plastic bag, and pour the marinade over the tuna.

5 Cover and refrigerate for 20-30 minutes for a light marinate or up to 2 hours for a more intense flavour. Be careful not to marinate for too long, as the acidity in the marinade can begin to break down the fish's texture.

6 Remove the tuna from the marinade, letting any excess drip off. Grill or sear each side for 1-2 minutes (for a rare or medium-rare finish).
