Not only did we pioneer the tuna ‘ranching’ method, where we capture juvenile tuna in the wild and raise them to maturity in the ocean, but our team also invested millions into developing a custom facility that uses -60 Celsius freezing technology so that we can offer Southern Bluefin Tuna year round.

After years of seeking the right technologies and methods of production, Dinko Seafoods managing director Lukina Lukin found a way to offer sustainable freezing processes that maintain the flavour and freshness of this sought-after Southern Bluefin Tuna.

Safely established in pens out in the ocean off Port Lincoln, the Southern Bluefin Tuna enjoy a rich diet in their natural waters, with minimal stocking densities and a reduced ranching period ensuring the stock remains in perfect condition.

Once harvested, we portion the tuna, and the cryogenic freezing system comes into play. Similar to the ‘snap-freezing’ process, the fish are frozen within hours of harvest using a cryogenic freezing technology system (at -60 degrees Celsius) that takes just 45 minutes for fresh fish to be entirely frozen.

This unique process ensures we maintain the highest integrity of the flesh without the need for nasty heavy chemicals, such as CO2 gases, to preserve the fish.

By minimising cell damage, we maintain the culinary integrity, with the tuna retaining perfect texture, colour and flavour so that consumers can enjoy the famed delicacy all year round.

Our customers enjoy the freshest seafood delights, with all tuna products, as well as Dinko Seafood prawns and sardines, packed in our vacuum-sealed cryovac bags and transported in styrofoam eskies at -60 degrees celsius.

While we sell Dinko Seafood products at wholesale prices, small orders can become expensive when these specialised transport costs are added. To enjoy better value for money, we recommend placing orders of 5kg or more.
