Hearty, healthy and delicious, this Thai Green Prawn Curry will spice up the hottest of summer nights and keep you satisfied for hours.
Ingredients
1 Prepare rice as per packet instructions.
2 When the rice is almost ready, heat the oil in a wok or large saucepan.
3 Add the shallot and garlic, and stir-fry for 1-2 mins.
4 Add the prawns and cook until they change colour.
5 Add the curry paste, coconut cream and 50ml water, and bubble for 2 mins.
6 Add the snow peas and zucchini and cook for 1-2 mins until just softened. Add the soy sauce and lemon juice and heat through.
7 Stir in the coriander and serve straight away with rice.
8 Top with chilli to garnish.
