  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp honey
  • 1 tbsp finely chopped green onions
  • 1 tbsp sesame seeds
  • 1/2 tsp freshly grated ginger
  • 1/4 tsp garlic, finely minced
  • 1/2 tsp sriracha

For the Bowl:

  • 2 cups short-grain rice (cooled)
  • 1 small cucumber, thinly sliced
  • 1 small avocado, sliced
  • 1 small carrot, julienned or thinly sliced
  • 1/4 cup edamame
  • 1/4 cup radishes, thinly sliced
  • Pickled radish(optional for a tangy contrast)

2 While the rice cooks, combine the diced bluefin tuna with soy sauce, sesame oil, rice vinegar, honey, green onions, sesame seeds, grated ginger, minced garlic, and sriracha in a medium bowl.

3 Gently mix the ingredients, ensuring the tuna is well coated. Set aside to marinate for about 15-20 minutes in the fridge.

4 Allow the rice to cool before serving portions into individual bowls.

5 Arrange the marinated tuna poke in the centre of the rice, then arrange the cucumber slices, avocado, carrots, radishes, edamame, and optional seaweed salad around the tuna.

6 Sprinkle additional sesame seeds on top and pickled ginger on the side for extra flavour.

7 Serve immediately.
