This sesame-crusted Southern Bluefin Tuna will impress your dinner guests with its appetising appearance and melt-in-your-mouth flavour.
1 In a large bowl, add the soy sauce, spring onions, lemon juice, sesame oil and grated ginger. Stir thoroughly to combine.
2 Add the Dinko Southern Bluefin Tuna steaks, turning to coat them completely with the marinade.
3 Transfer the tuna steaks and marinade to a zip lock bag. Press the excess air out of the bag, seal, and place in the refrigerator to marinate for 20 minutes.
4 Preheat the grill to high heat.
5 Place the sesame seeds on a plate or a shallow dish. One at a time, remove the tuna steaks from the marinade and coat all sides in sesame seeds, pressing the seeds onto the steaks. Set leftover marinade aside.
6 Once the grill has reached a high heat, spray the grill plates lightly with nonstick spray. Place tuna steaks on the grill and cook for approximately 3 minutes on each side.
7 Remove tuna steaks from the grill and keep warm.
8 Pour the leftover marinade into a small saucepan and bring to the boil. Mix the cornstarch with water and add to the saucepan, stirring with a whisk. Simmer for about 3 minutes, or until the sauce thickens.
9 To serve, slice the tuna steaks into thin pieces (the steaks should have a rare, pink interior). Arrange the slices on a plate and drizzle with marinade.
10 Serve with a fresh salad.
