Bluefin Tuna Steak with Mango and Cashews

Fresh, healthy and ready in under 30 minutes, this Bluefin Tuna Steak with Mango and Cashews is the perfect weeknight meal. The decadent texture of the tuna is perfectly complimented with smooth avocado and sweet mango, while the Hawaiian-style dressing adds perfect umami flavours.

  • 100g Dinko Bluefin tuna steak
  • ½ cup basmati rice
  • Handful baby spinach
  • ½ mango, diced
  • ½ avocado, diced
  • ¼ cup cashews
  • ½ teaspoon black sesame seeds
  • Salt and Pepper
  • 1 tbsp soy sauce
  • 1 ½ tsp brown caster sugar
  • 1 tsp sesame oil
  • 1 tbsp sunflower oil
  • 1 tbsp rice vinegar


1 In a jar, combine soy sauce, caster sugar, sesame oil, sunflower oil and rice vinegar. Mix until well combined. Set aside.

2 Cook basmati rice according to package instructions.

3 Heat a large cast-iron skillet over medium-high heat, then lightly coat the skillet with cooking spray.

4 Coat the Dinko Southern Bluefin Tuna steak with salt and pepper, then place tuna in the skillet. Sear tuna for 2 minutes on each side. Place to one side and allow to cool.

5 Thinly slice tuna steaks across the grain.

6 In a large bowl, combine baby spinach, mango, avocado and cashews.

7 Place rice on a plate and top with salad mix and tuna slices. Drizzle with sauce and sprinkle with sesame seeds.

8 Serve immediately.
