Australian Bluefin Tuna, or Southern Bluefin Tuna, is the largest species of tuna in the world. Known for its deep red colour and luxuriously creamy texture, it is especially prized in sashimi dishes.
We care deeply about creating a sustainable future for our oceans and their inhabitants; that’s why we focus on preserving the fish stocks in Australia’s Southern Ocean and meeting the strict quotas set by the government.
A leader in the industry, Dinko Lukin developed an innovative tuna farming method known as ‘Catch and Ranch’ to help protect the fish stock. Focused on increasing the weight of captured tuna during captivity rather than taking more fish from our oceans, this method has been instrumental in revitalising the Southern Bluefin Tuna population in South Australia.
After feeding the tuna on a rich, natural diet that allows them to grow in size while maintaining their quality, we harvest our caught Southern Bluefin Tuna using the humane Japanese ‘iki jime’ technique. This method minimises stress and maximises the quality of the fish.
When you choose Dinko Seafoods, you can be sure it’s an incredible choice for your next meal: for your restaurant and our oceans.

Chefs and foodies around the world celebrate Southern Bluefin Tuna for its rich colour, decadent flavour and exquisite texture.
With deep red flesh and marbled texture, the Southern Bluefin Tuna is known for storing layers of fat throughout its muscles, much like Wagyu beef. This high-fat content also adds to the dining experience, with the Southern Bluefin Tuna considered the most delicious of the tuna varieties.
Used predominantly for sushi and sashimi, the three premium cuts of the Southern Bluefin Tuna are known by the traditional Japanese terms otoro, akami and chutoro.
Otoro is from the belly, or underside, of the fish and has the highest fat content — otoro translates to ‘big fat’. Because of this fattiness, the otoro falls apart easily and can quite literally melt in your mouth.
The akami is the largest part of the fish, covering the top loin, shoulder and tail. It is meatier in texture and brighter in colour.
Chutoro refers to the small fillet that sits between the otoro and the akami. It is a combination of the two, with both a meaty and fatty texture.

But Southern Bluefin Tuna isn’t just a world-renowned delicacy; it’s a nutrient-packed superfood.
Rich in omega-3, vitamin B12 and a host of other vitamins and minerals, the health benefits of Southern Bluefin Tuna are pretty impressive.
Southern Bluefin Tuna is one of the best sources of omega-3, with around 2,260mg per 100g. Studies suggest that omega-3 supports the heart by reducing levels of triglycerides in the body, reducing blood pressure and raising levels of ‘good’ HDL cholesterol, which helps prevent blood clots and plaque from forming.
Southern Bluefin Tuna is also a rich source of vitamin B12, which is vital for the production of red blood cells and the proper functioning of your nervous system. B complex vitamins are also directly involved in energy metabolism, increased efficiency of organs and increased energy levels.
The concentration of selenium in Southern Bluefin Tuna also contributes to its superfood status. Though you may never have heard of it, selenium is an essential mineral that is vital to your health. Rich in antioxidants, increased selenium intake has been linked with improved memory function in patients with Alzheimer’s disease and improved verbal fluency in patients with impaired brain functioning.
Bluefin tuna also contains vitamin C, zinc and manganese, all of which are considered antioxidants that help fight against free radicals, the harmful by-products of cellular metabolism that cause chronic diseases.
